Banana Loaf and Loads of Love
(Easy and healthy recipe included)
If you know me, you know I love to cook. I’m not very fond of following recipes, though. What I’m good at, is creating my own recipes and coming up with my own versions of existing recipes – healthier or improvising with whatever ingredients I have, but making them my own.
I love being challenged with an empty fridge/pantry. My favorite is cooking when I’m running out of ingredients, like grocery- shopping-day’s eve – that’s when I can really explore my creativity and come up with my most surprisingly good dishes. See, I’m no chef, and although I really appreciate a meticulously prepared meal, I’m not gonna go overboard and shop for a huge list of ingredients in order to cook a meal, that’s not me. I like simple, improvised, healthy cooking.
I believe cooking shouldn’t be about stressing out over a recipe or a burnt cake (I’ve burnt a handful – I’m a multi-tasker!), it should be about elaborating something that tastes good and it’s nourishing. It is something you should do with love.
I’ve always thought that baking is such a miracle. You add up a few ingredients, put in the oven and voilà! Isn’t that magical? How it changes shape, consistency, color, smell, texture, taste! Goodness! If this is not about love, I don’t know what it is. You cook for your loved ones to show your love, and you looove when they love it, don’t you? Such an expression of love, from both ways!
Speaking of feelings, I’ve always loved Starbucks’ banana loaf. It used to be my favorite (along with a white chocolate mocha – WHAAAAT COACH?? Yes! Guilty!) until I moved back to Brazil about 8 years ago and didn’t have a Starbucks near me, so I found a recipe online that said “betcha mine is better”- I’ll never forget that! So throughout the years I’ve been making my changes… whole wheat flour, that became gluten free flour, that finally became almond flour… brown sugar that became maple syrup… butter become coconut oil… chocolate chips became 70% cocoa chocolate, that also became raisins, chia seeds and other healthy yumminess!
My recipes are never the same, since I keep adapting to what I have available, like either chia seeds or flax seeds or quinoa flakes… or all of the above! But this last banana loaf recipe was worth writing down to share with you!
So fluffy, so moist, so sweet, so deliciously healthy (I’m not bragging here, my husband told me so. And we are the only 2 who can confirm that because we didn’t share the loaf with anyone this time. He even said he thought about sharing with a co-worker, but he didn’t! Oops – next time I’ll send him a couple more slices).
Enough advertising, let’s bake!
Here’s the recipe for my deliciously healthy gluten-free, lactose-free, sugar-free and loaded with love, Banana Loaf:
3 eggs
2 tbl coconut oil
½ cup maple syrup
1 1/2 cup almond flour
½ cup flax seed meal
3 mashed bananas
¼ cup gluten-free oats
½ cup raisins
½ cup chopped walnuts
1 tsp cinnamon
1 tsp baking soda
1 tsp baking powder
dash of pink Himalayan salt
Grease loaf pan with coconut oil, add your lumpy batter and bake for approximately 45 minutes. Turn off oven and let it sit for about 15 minutes.
Feel free to adapt and explore your possibilities, I like to add pure vanilla extract, quinoa flakes, chocolate chunks (70%), other nuts… have fun!
